Tomato Soup Ingredients 2 28 oz cans whole peeled tomatoes Drained? Carrots 2 carrots, peeled and diced Celery 2 ribs, diced Onions 1 large yellow onion, diced Tomato paste small can Chicken or vegetable broth 4 cups Sugar 2 Tablespoons Parmesan rind 1 piece 2 ounces Olive oil 2 Tablespoons Kosher salt and ground black pepper Garlic?
Tomato Soup Instructions Heat oil in large stockpot over medium heat. Once the oil is hot add the carrots, celery and onions and continue to cook, stirring occasionally, until the vegetables have softened about 8 minutes. (Season with salt and pepper) Add the tomato paste and stir until the paste has darkened. Scoop in the tomatoes along with the parmesan. Pour in the broth. How long until the tomatoes break down?
