Arugula Salad Total Time: 25 min Prep: 15 min Assembly: 10 min Serves: INGREDIENTS Salad Baby arugula Cannellini beans _rinsed Prosciutto chopped Shaved parmesan cheese Shaved Romano cheese Cherry tomatoes cut in half Amounts/Measurements? Dressing Extra virgin olive oil White balsamic vinegar Grey Poupon ground mustard Kosher salt Pepper DIRECTIONS For dressing, start with 3:1 ratio. You may need to more vinegar. Mustard should emulsify and be smooth. Salt and pepper to taste. **FOR REGATTA S this is easy to do on site.

Chili Total Time: 90 min Prep: 15 min Cook: 40 min Serves: Approx 25 Makes: 3 gallons INGREDIENTS cup extra virgin olive oil 1 3/4 lbs yellow onions, chopped 2 lbs sweet Italian sausage, casings removed, cut up 8 lbs ground turkey (light and dark meat) 1 tbsp pepper (or to taste) 24 oz tomato paste 3 tbsp fresh minced garlic 6 tbsp ground cumin (or to taste) 8 tbsp chili powder (or to taste) cup Dijon mustard 4 tbsp dried basil 4 tbsp dried oregano 5 cans whole Italian plum tomatoes, mashed cup burgundy wine (or whatever red wine you have) cup Italian parsley, chopped 3 16 oz cans red kidney beans (optional) DIRECTIONS Heat oil in a large pot. Add onions and cook, covered over low heat about 10 minutes until translucent. Add sausage and turkey into pot and cook over medium heat until meat is browned (do this in batches). Drain excess fat. Stir in pepper, tomato paste, garlic, cumin, chili powder, mustard, basil and oregano Add canned tomatoes, wine and beans if using. Stir occasionally and season to taste. **FOR REGATTA S This is good if you have a cold race! For 100+ rowers make 12 gallons Divide and conquer. Once cooled down you can store it in the fridge or freeze it. Bring it to the site and heat up in the morning so that it is thawed and warm for rowers.

  14. Chicken Stir Fry Total Time: 45 min Prep: 30 min Cook: 15 min Serves: 4-6 INGREDIENTS 2 lbs chicken cut in cubes 4 tbsp cococut oil 1 Onion cubed 1 Red pepper sliced on the thin side 1 Yellow pepper sliced on the thin side 2 tbsp flour (I used gf flour) c. tamari 1/3 c honey 1 tsp ginger tsp red pepper flakes (don t make it too spicy for the rowers) salt and pepper DIRECTIONS Toss chicken and flour together in a bowl. Heat a large pan over medium heat and cook the chicken in 2 tbsp of coconut oil for about 7-10 minutes until a little golden on the outside. Remove from the pan. Add the rest of the coconut oil to the pan and add the onion and peppers. Cook until soft and then add the chicken back in. Add salt and pepper to taste. Combine the tamari, honey, ginger and red pepper flakes. Mix together and pour in to the pan. Let it cook for about 5 minutes. **FOR REGATTA S Cook the chicken and the veggies ahead of time. Store in Ziploc bags. Make sauce and store in a container. On site- reheat chicken veggies and sauce together in batches.

  15. Marinated Chicken with Broccoli Total Time: 12+ hours Prep: 45 min Inactive: 12 hrs or overnight Cook: 40 min Serves: INGREDIENTS 4-6 double bags grilled chicken from Costco, cut small 4-6 bags broccoli from Costco, cut small 2 lb bags tri color peppers cut into strips a bunch of scallions chopped (greens only) Herbs: rosemary, thyme basil, sage Extra virgin olive oil Salt and pepper Optional: balsamic vinegar Optional: pasta, rice or quinoa, shredded mozzarella DIRECTIONS Mix cut-up chicken with olive oil and herbs, salt and pepper and marinate overnight (balsamic is optional) Drizzle veggies with olive oil, salt and roast in a 425 degree oven until slightly charred (about 40 minutes), turning half way through Store chicken, veggies and pasta separately. **AT REGATTA Mix all ingredients together adding herbs, olive oil and salt and pepper as needed.

  16. Orange Chicken Total Time: 40 min Prep: 20 min Cook: 20 min Serves: 8 INGREDIENTS Chicken 2 lbs chicken cut in to pieces (dark meat preferred) 1 tsp salt 2 tsp sesame oil (use coconut oil if there s a sesame allergy) Sauce 1 orange - zest and juice 1/3 c. coconut aminos or tamari 1-2 tbsp grated ginger 2 tbsp tomato paste 2 tbsp honey tsp red pepper flakes (optional) 1 tsp garlic powder 1-2 tbsp tapioca starch DIRECTIONS Sprinkle salt on chicken. In a large skillet over medium heat add the sesame oil and chicken. Cook until almost cooked through (5-7 min). While chicken is cooking, make sauce . In a small bowl add orange zest and juice, coconut aminos, ginger, tomato paste, honey, red pepper and garlic powder. Mix together. Pour mixture over chicken and coat evenly. Cook for 5-10 minutes. Add tapioca starch if you prefer a thicker sauce. Then cook for a few minutes more to allow the sauce to thicken. **FOR REGATTA S Sauce can be made ahead of time and place in a container. Get a few people to cook the chicken ahead of time and place in Ziploc bags. Multiply the recipe depending on number of regatta attendees On site, warm the chicken and sauce and transfer in batches to larger tins for serving.
