ALFA ALFA
 
B.S.: consist of entire plant of 
Medicago sativa

Fabaceae
 Chem. Const. : Leaves, sprout and seed contain vit.
K & C, copper, folate, thianine, riboflavin and iron.
One cup of sprout conatin 1gm of protein and 1gm of
carbohydrate. It also contain bioactive comp. like
saponin (Medicagenic acid), flavone, coumarin
(medicagol), phenolic compond (coumesterol),
alkaloid(trigonelline)

Uses: (as health food)
Alfaalfa sprout as a salad ingredient
 Raw alfa alfa seed sprout are 93% water, 2%
carbohydrate, 4% protein and 0% fat
100 gm raw alfa alfa sprout give 23 calories and 29%
of the daily value of vit. K.
Also use in treatment of diabettes, artharitis, diuretic.

CHICORY
 
Dried root of 
Chicorium intybus
. (Asteraceae)
Root contain high amount of insulin (60%),
sesquiterpene lactone, tannin, pectin, fixed oil.
Rich source of

As a digestive aid, antinauseant.
In t/t of flu, cold & ginger oil are widely used in soft

It contain sotolone which impart aroma.
100 gm seed contain 9% water, 58% carbohydrate, 23%
protein and 6% fat and give 323 Kcal energy.
Use as health food: Stimulate appetite, digestion, reduce
cholesterol and cardiovascular risk, control diabetes,
prevent colon cancer, induce labour.
