ALFA ALFA B.S.: consist of entire plant of Medicago sativa. Family: Fabaceae Chem. Const. : Leaves, sprout and seed contain vit. K & C, copper, folate, thianine, riboflavin and iron. One cup of sprout conatin 1gm of protein and 1gm of carbohydrate. CHICORY Dried root of Chicorium intybus. (Asteraceae) Root contain high sesquiterpene lactone, tannin, pectin, fixed oil. Rich source of carotene Small amount of Indole alkaloid caboline. Ginger Rhizome of Zingiber officinale (Zingiberaceae) It contain 1-2% volatile oil, 5-8% pungent principle, resinous mass and starch. Volatile oil contain zingiberene, bisaboline etc. Gingerol is a yellow pungent oily liquid. Use as health food: as domestic spices and used in many commercially food preparation. Fenugreek Seed & leaves of Trigonella foenum graecum Fam: Leguminoseae Its seed contian alkaloid( tigonelline, gentiamine), steroidal saponin, flavonoid (vitexin), mucilage, protein, aminoacid, vit.A, B1. It contain sotolone which impart aroma. 100 gm seed contain 9% water, 58% carbohydrate, 23% protein and 6% fat and give 323 Kcal energy. Use as health food: Stimulate appetite, digestion, reduce cholesterol and cardiovascular risk, control diabetes, prevent colon cancer, induce labour.
Garlic Bulb of Allium sativum ( Liliaceae) Contain sulphur compound like allin, allicin, diallyl sulphide; enzyme-allinase; aminoacid-arginine; minerals- selenium germanium; vitamin-B1,A, C. It possess cardiovascular, hypolipidemic, antihypertensive and anti-athrosclerotic property. Also use as carminative, gastric stimulant, aphrodisiac, insecticide. Garlic leaves are use as vegetable. Garlic is essentail in Middle esatern and Arbic cooking, with its presence in many food items.
Honey Honey is sugar like secrtion deposited in honey comb by the bees Apis mellifera, Apis dorsota and other species of apis. Fam: Apidae Honey is an aqueous solutioncontaining 35% glucose, 45% fructose and 2% sucrose. It is used as demulcent, sweetening agent, nutrient and antiseptic.
