Evaluation of Research and Practical Skills in Culinary Project
In this evaluation, the process of researching and designing a restaurant, creating a dish, and analyzing personal performance in a culinary project is discussed. The importance of time management, organization, continuous improvement, research decisions, and the use of appropriate technologies are highlighted through practical examples and reflections. The evaluation emphasizes the impact of effective research, decision-making, and skill application on the successful completion of the culinary task.

How to write an Evaluation
Language should be formal No I I decided to mash the potato before the steak was finished. This made sure that my dish was all ready to serve at the same time. Instead It was decided that the potato would be mashed before the steak had finished cooking. This ensure that all parts of the dish were ready to serve at the same time.
Start with the Task (1 or 2 sentences) The task was to research and design a restaurant which included a logo, restaurant design and menu. From this menu a dish was created and presented.
Own Performance Time management, organisation, effort Practice unfamiliar skills Tried new ideas/ skills Example An unforeseen issue was the cooking of eggs cracked straight onto the pizza. The eggs appeared underdone, therefore it was decided that the pizza should continue to cook until it was nicely browned. By leaving the pizza in the oven longer the plating and photographing time was shortened. However this was resolved after taking the pizza out of the oven, as it was discovered that eggs continue to cook in their own heat. Research on the correct cooking method of eggs would have created a longer plating time and in turn creating less stress turning the cleaning stage.
Improvement Things need to work at or practice more State what happened Then say how this could have been improved Then state how this improvement would have impacted the practical
Research Decisions Was the research useful, in what way? Example In order to create a successful pizza, it required thorough preliminary research. This research included learning how to roast beetroot correctly. Discovering creative substitutes for ingredients in a healthy pizza dough, such as finding alternatives like honey instead of sugar or using ingredients like goat cheese instead of cheddar cheese. By doing each of these prior to the day the practical procedure ran smoothly. Also due to the previous research, many potential issues were eliminated, leading to a efficient time management, organization and a successful end product.
Use of Appropriate Technologies Did you use the right piece of equipment for the job? Did you have to learn how to use a new piece of equipment? Example Making dough Making sure the patty didn t fall apart Using food processer Plating techniques Mise en place etc
Possible Improvements and conclusion Was there anything you would do differently or better next time. Provide a summary of how you went overall Example It would have been beneficial to have done research prior to the day on how to test if the eggs cracked onto the pizza were ready, this would have created a stress-free cooking process. It would have also aided the procedure to have done a practice of the pizza dough, as this would have made it easier to gauge how cooked it was. Overall, the final product was successful, met the criteria and exceeded expectations in taste.
